Mr. Bingles is away for work for a couple of days. I’m in charge of everything, I don’t have a babysitter and my mom lives 16000 Km far away from me, so NOBODY can help me out with the kids and the chores.

Today I needed a quick recipe for lunch and this is what I came out with:

Zucchini tart

Ingredients:

2 medium zucchini

2 ready rolled puff pastry sheets

100 gr. cheese (I used cheddar)

2 eggs

salt & pepper

garlic

Directions:

  • defrost 2 puff pastry sheets
  • in a pan cook the sliced zucchini in a bit of oil and garlic  IMG_8282-002
  • once the zucchini are cooked, put them in a bowl, add one egg, grated cheese, some salt and pepper and mix

  • roll out one puff pastry sheet, spread it out on your tray, make little holes with a fork

  • spread your zucchini mix with a spoon on your puff pastry and cover it over with your second sheet of puff pastry

  • put it in the oven 180°C for about 30 minutes
