This is another quick and easy recipe that involves the use of one vegetable: SPINACH (so much hated by my kids). This is my attempt to make them eat this veggie.

Ingredients: 

250 gr. (frozen) spinach

100 gr. ricotta

1 egg

2 sheets (frozen) puff pastry

salt, pepper, oil, garlic

flour

Directions:

Cook the spinach in a pan with some oil and garlic, sprinkle some salt and pepper when they’re nearly cooked.

Put the spinach in a bowl and mix it with the ricotta.

Roll out one sheet of puff pastry, divide it into 4 square pieces

Spread some of the spinach-ricotta mix on each of the squares making sure you spread it only on half your square

Fold the square into a triangle.

Close the edges and make a pattern with a knife.

Brush some egg on each little triangle

Put all your triangles (I have made 4) on a pre-oiled tray and put it in the oven 180°C for about 20 minutes.

Do it all over again with your second sheet of puff pastry

p.s. Little Miss Fussy and Little Mr. Copycat loved them. LMF asked me to have them in her lunch box: WOW! Little Miss Daydream only liked the puff pastry bit. Two out of three, not too bad 🙂
